The majority of our food comes from Wales. The vast majority of it is grown, reared or made following either organic or biodynamic practices.

We present these ingredients in a modern way, while also paying respect to our culinary heritage.

Flavours that we focus on try to convey our unique landscape. We are particularly driven by showcasing the wild food of our country. We choose to highlight what we believe is the essence of Wales - our incredible wild game, fish, shellfish, seaweeds and coastal vegetables.

We work closely with fishermen, growers and farmers and they dictate what goes on the menu each week.

We serve a short four course menu at lunch and a choice of either a seven course or ten course tasting menu at dinner. Each of them made with seasonal products that celebrate the best of our little part of the world.
